Chocolate Cookies

This 4 ingredient chocolate cookie, based on good fats is simple, healthy and great for our kids and teens to fill them up for longer

INGREDIENTS

1 x 200g jar of nut butter ( I used cashew, peanut butter or tahini is cheaper)

2 eggs

¼ cup of cacao

80g of coconut sugar (see note)

 

METHOD

Mix all ingredients together in a bowl with a wooden spoon then spoon teaspoons of the mixture (its sticky) onto a baking tray and bake at 160 degrees for around 12 minutes or when edges start to brown.

 

They will still be soft when you take them out and they are not a crisp biscuit anyway.

 

NOTE – I find this is too much sugar for my tastebuds but if you are used to sweet foods you might need this much to find them enjoyable for now.   You can decrease the sugar content if you like.
